Instructions:

  • The seasonings must first be stripped, washed and diced, then put together in a bowl, (Put the pineapple in a separate bowl).
  • Put ginger into 5½ cups of water, then blend in for two minutes and strain. (use the ginger juice only).
  1. Put to boil 5½ cups of ginger water.  Add all the seasonings; not the pineapples.  Gauge the stove on four until it comes to a boil, then put the stove gauged on very low flame.  Cover the pot slightly.  Allow to cook and stew for two hours.
  2. After that, turn the stove off then add the pineapples.
  3. Strain the sweet and sour sauce before you soak chicken wings

Note: (if you are using the pineapple from the can; please remember to drain the juice form it.)

The second step is for the Chicken Wings only:

Ingredients:
2 cups of Wheat, White Flower
1 pinch of Baking Powder
1 Onion (diced)
½ tablespoon of black pepper
½ table of Sea Salt
2 cups of coconut oil

Instructions:

  • Cut Chicken Wings in two piece. Remove the fin piece.
  • To the flour adds a pinch of baking powder.  Put in a covered container or a plastic bag to seal.  Next after the chicken wings are marinated, use a fork to remove the seasonings from the chicken wings, now put it in the flour.  Shake well.  (You are now flouring the chicken wings.)
  1. Put to heat a big frying pot on the stove gauged on Hi (eight). After a minute add the oil.  Allow to get hot for three minutes.
  2. Now add the chicken wing one piece at a time to the hot oil; put them not too close.
  3. Allow to fry on one side for four minutes, then flip it on the other side for three minutes.  Be sure the chicken pieces are fried properly.
  4. Then remove! Once every piece is fried.
  5. Put the fried chicken wings in the cooked sweet and sour sauce.
  6. Do so 30 minutes before serving.
  7. Sweet and Sour Chcken Wings is eaten alone with ranch dressing.

SWEET AND SOUR CHICKEN WINGS

Ingredients:

24 to 36 Chicken Wings
2 stacks of Scallion (diced)
2½ medium Onions (diced)
1 carrot (diced)
½ Sweet Pepper (diced)
2 small Tomatoes (diced)

1 ripe Pepper – keep it whole. (Scotch Bonnet or real Chili Pepper)
Ginger – (cut 3 pieces the size of your thumb)
2 tablespoons of Sea Salt or (1 ½ regular salt.)
1 tablespoon of Parsley (dried or fresh)
1 tablespoon of Basil (dried or fresh)
½  teaspoon Nutmeg (grated)
½ tablespoon of Egg powder
½  teaspoon of Pimento Seeds
Thyme (fresh pieces tie together the size of two fingers)
4 tablespoons White Vinegar
½ cup of Brown Sugar
2 tablespoons of Coconut Oil (or Olive oil)
½  Cho-Cho (diced) - optional
2 tablespoons of Ketchup
2 cups of diced Pineapple (canned or fresh)
