Method:

  1. Cut grease paper to an 8 inch tin; butter lightly and lay the grease paper.

  2. Blend the ginger and coconut milk then stain.

  3. Dilute the molasses to the coconut milk. Keep refrigerated until you are ready to use.

  4. Combine the butter, sugar to cream, add the egg, then coconut milk.

  5. Now the time to preheat the oven at 150°C or 300°F/

  6. Grease a 7-inch ring baking tin.

  7. Sift the flour, salt, cinnamon, nutmeg, baking powder, and baking soda.

  8. Combine all the ingredients well to a smooth texture.

  9. Pour the MiQuel’s Jamaican Ginger Cake dough in the baking tin.

  10. Pour the cake mixture into the prepared tin and bake for 45 minutes. Insert in the cake a tooth tip, or a clean dry knife. Check to see if it is ready.

  11. Baking time is 50 minutes.

  12. Ginger Cake is delicious with tea for lunch or at night.

Ingredients:

110g or 1 stick of Butter
½ cup of Brown sugar
1 tablespoon Molasses
1 cup of Coconut milk
1 large egg
2 cups of All purpose flour (or baking)
1-teaspoon ground cinnamon
1-teaspoon ground nutmeg
I pinch of salt.
½ teaspoon baking of soda
