Instructions:

  1. First, Sift the flour with baking powder in a larger bowl. Then add the sugar and the salt.
  2. Now, to that add the butter by cutting it into pieces. Knead in to coarse crumbs.
  3. After that, blend the coconut milk with the white vinegar for 30 seconds. (This will the foam milk make shortcake soft. It also helps to preserve the cake.)
  4. Next, add the coconut milk with the shreddred coconut to the flour mixture. Knead in to a soft dough.
  5. Place the size grease paper on a baking tray. Do not grease the tray..
  6. Next, use a tablespoon, drop the coconut short cake mixture on the baking tray. Place them 3 minutes apart.
  7. If you have designed baking tray for cookie use it.
  8. Use a clean cooking brush to lightly glaze the shortcake with egg yolk. Then sprinkle the granulated sugar on top
  9. Now, bake at preheat oven 425°F or 400°F for 12-15 minutes or until lightly browned.
  10. Place on a wire rack to cool, you are finish.

Ingredients:

• 2 cups of Flour (all-purpose)
• 2 tablespoons of Sugar (granulated)
• 1 tablespoon Baking Powder
• 1/2 teaspoon Sea Salt (any salt)
• 1/4 cup of Cold Butter
• 1 cup of Coconut Milk (any milk is good)
• ¼ teaspoon of White Vinegar (this is blind with the coconut)
• 1/2 cup of Coconut (shredded)
• Egg Yolk, slightly beaten (use to brush over cake before bake)
