Instructions:

  1. First, peel, wash and dice or slice the seasonings.
  2. Second, cut chicken to 1 to 2 inch pieces
  3. Marinate the chicken with the seasonings for a while. (Do not add the herbs yet)
  4. Next to heat a stew pot a frying. Gauge stove on flame 6 or 8 (Hi).
  5. Add the cooking oil. Allow to get hot, or until a little smoke.
  6. After that, add the chicken piece by piece. But first use a cooking fork to remove the seasoning from the chicken piece. (If you don' t remove the seasoning, it will burn before the chicken cooks.)
  7. Allow frying on one side for 4 to 6 minutes, or until browns.
  8. Do the other side for the same time.
  9. If you are using boneless chicken the frying time is less.
  10. Once you complete that, carefully remove half the cooking oil. (You can use a spoon that scoops.)
  11. Turn the stove off while you remove the oil.
  12. Now, after that turn the stove on again on flame 4.
  13. Add the diced onion, 30 seconds after the the garlic, then the other seasonings. Stir fry for 1 minute or less.
  14. After that, add the sugar. (It really brings the taste up).
  15. Next open and add the canned baked beans, and then the dried herbs. Stir in!
  16. Add the water to soften the thickness of the gravy.
  17. Allow simmering for 3 minutes on low flame to finish.

½ of a whole Chicken (cut to parts, do not debone. However you can use boneless chicken as well.)
1 medium Onion (diced)
2 Garlic Cloves (mashed)
Ginger (cut half finger)
½ ripe Pepper (scotch bonnet)
1½ tablespoon of Sea Salt
1 teaspoon of Parsley (dried or fresh)
1 teaspoon of Basil (dried or fresh)
½ teaspoon of Pimento Berries
1 teaspoon Thyme (fresh pieces tie together the size of one finger)
½ cup Coconut Oil (or Olive oil) (after fry remove half)
1 cup Water (more gravy is best)
12 oz can of Baked Beans
1 tablespoon of Sugar
