Instructions:

  1. Strip, wash, and dice all the seasonings.
  2. Cut half of a chicken into chicken parts. Remove chicken’s skin (optional). Nevertheless, remove the chicken’s skin. (Some people fry the skin into the oil flavoring).
  3. Combine the chicken’s parts with all the seasonings, herbs, and vegetables into a bow. Not the browning yet. You can marinate the chicken from 15 minutes to 12 hours. Refrigerate within the time.
  4. Then after that, put your stove on Hi flame. Put to heat a frying pot for stewing. Then add the oil. Wait for 1 to 2 minutes or until you see a little smoke.
  5. While waiting for that, start removing the seasonings from the chicken parts. To do that, hold the tip of the chicken part with your two fingers. With the other hand, use the cooking fork to remove the seasonings. (Flour Chicken for frying)
  6. Next, add the chicken’s parts in the hot oil. Allow it to fry on 1 side for 5 to 6 minutes, and other side 5 to 6 minutes too.
  7. Remove half the oil after fry, still hot. Use a spoon that scoops. Immediately add all the seasonings, browning, cover the pot for one minute, next add the water, and then cover the pot with lid properly. Now your stove should be gauge on four. Allow the chicken to stew for 12 to 15 minutes. Next, add the ketchup and simmer the chicken for 3 to 5 minutes. Finish!
The gravy is thin. To prepare, cook Brown stewed chicken totals 45 minutes.

1 stack of Scallion (diced)
1 medium Onion (diced)
2 small Tomatoes (diced)
4 Garlic Cloves (mashed)
¼ of Sweet Peppers “Paprika” (diced)
½ ripe Pepper (scotch bonnet or real pepper)
Ginger – (cut to half the size of your thumb)
1½ tablespoon of Sea Salt
1 tablespoon Browning
1 tablespoon of Parsley (dried or fresh)
1 tablespoon of Basil (dried or fresh)
½ teaspoon of Pimento Seeds
1 teaspoon Thyme (fresh pieces tie together the size of one finger)
1 ½ tablespoon White Vinegar
½ cup Coconut Oil (or Olive oil) (after fry remove half)
1 cup Water (more gravy is best)
3 tablespoons Ketchup
