Ingredients of the Sauce:

1 tablespoon of Salt
3 medium Onions (sliced)
2 heads of Garlic (peel and diced)
2 Cho-Cho (diced)
2 Carrots (diced)
5 stalks of Scallion (peel and diced)
3 ripe Scotch Bonnet Pepper (diced)
2 fingers of Tyme (tie together)
2 to 3 cups of White Vinegar (use sufficient amount)


Put to boil on very low frame, for 15 minutes.

This sauce is used to put on fried fish;
Jerk Chicken and Roasted Pork.


PICKLING PEPPER JAR

Alternatively, Jamaicans put this
pepper sauce in jars,
and seal it properly for storage.


Ingredients for pickling pepper jar:

3 medium Onions (sliced)
2 heads of Garlic (peel and hold)
5 stalks of Scallion (peel and diced)
1/2 cup of Pimento Seeds (hold)
3 ripe Scotch Bonnet Pepper (sliced and hold)
2 fingers of Tyme (use the leaf only)
2 to 3 cups of White Vinegar (use sufficient amount)

2 Cho-Cho (Use to create art pieces
such as flowers, little hearts, pineapple, etc)
2 Carrots (Use to create art pieces
such as flowers, little hearts, pineapple, etc)

This sauce is used to put on fried fish;

4 cups of Callaloo (shreddred)
6 Okras (washed and diced)
Used to stuff 3 to 4 Snapper Fishes.

Time to Bake 35 Minutes: 300 degree.
