25 pounds of Pork Chops (1/2 inch Thick)

1 cup of Salt
12 medium Onions (diced)
8 heads of Garlic (diced)
3 fingers of Gingers (peel and cut once)
8 stalks of Scallion (diced)
1/2 cup of Pimento seeds (grounded)
6 ripe Scotch Bonnet Pepper (diced)
Tyme (tie to size of your palm)
8 tablespoons of Browning

First Steam Marinate for 4 hours on medium flame half way, low other half.
Time to Grill 35 to 45 Minutes, sprinkle water over the grill every 15 minutes. We do this cut down the heat and steam.


Ingredients: family dinner proportion

2 to 3 pounds of Pork Chops (1/2 inch Thick)

2 tablespoon of Salt
3 medium Onions (diced)
1 head of Garlic (diced)
1 fingers of Gingers (peel and cut once)
2 stalks of Scallion (diced)
1 tablespoon of Pimento seeds (grounded)
1 ripe Scotch Bonnet Pepper (diced)
1 green Scotch Bonnet Pepper (diced)
Tyme (tie to size of three fingers)
2 tablespoons of Browning

First Steam Marinate for 1 hours on low frame, no water.
Time to Grill 35 to 45 Minutes.

2 to 3 cups of White Vinigar

Put to boil on very low fframe, for 15 minutes..
