Roti Method.

Instructions: TO BE EDITED

  1. Stripe wash and dice all the seasoning, then put together in a bowl., (Keep the sweet pepper, ½ of an onion diced, coconut oil, ketchup, white vinegar and the browning in separate bowls.)
  2. Now put to heat a pressure cooker pot for a minute, add oil.  With the stove gauged at 6, add all the seasoning, then the steak strips. Allow to cook for 8 minutes. Add the white vinegar then the browning. Stir in the ingredients, cover for a minute..
  3.  Next add 2 ½  cups of boiled hot water. Stir in! This time cover the pressure cooker with the pressure cooker pot cover correctly.  (Note: Start the timing when it starts to whistle.) Once it starts to whistle gauge the stove on low flame.  Allow to pressure for 15 minutes.
  4. Remove the cover once it’s cool, add the ½ diced onion and the ketchup. With the stove gauged at 6. Cover with a regular pot cover and allow to stew for 5 minutes. Then turn the stove off.
  5. Add the strips of sweet peppers and cover.

Ingredients:

½ lb Saltfish - boil 8 -12 minutes
1 can / 300g Mixed Vegetable - drain water.
or ½ lb of Frozen Mixed Vegetable
½ stack of Scallion diced (optional)
1 medium size Onions diced
½ ripe pepper (Scotch Bonnet)
1 small tomatoes diced
1 teaspoon of Parley ( Dried or Fresh)
1 teaspoon of Basil ( Dried or Fresh)
¼ teaspoon of Pimento Seeds
Thyme (Fresh pieces together the size of one finger)
2 Garlic Cloves
¼ cup Coconut Oil ( or Olive oil)
1 cup Water
¼ Ketchup in the end.

Boil the frozen mixed vegetable for 8 minutes. Then remove the water until you are ready to use it.

Ingredients:

BAKING FISH STUFFING

Ingredients of the Stuffing (This is use to stuff the fish before baking)

4 cups of Callaloo (shreddred)
6 Okras (washed and diced)
Used to stuff 3 to 4 Snapper Fishes.

Time to Bake 35 Minutes: 300 degree.
