Method:

  • First, soak cornmeal in 2 cups of water for 20 to 30 minutes.
  • After that, put to boil 2 cups of water, once hot add the soaked cornmeal and stir well.
  • Gauge stove on very low flame. Cover properly with the pot's lid.
  • Allow simmering for 25 minutes.
  • While that cooks, blended the peeled green bananas with the coconut properly. Blend for 2 minutes. Do this 5 minutes before adding.
  • After that, add the banana and coconut blended mixture to the cornmeal boiling on the stove, and one cup of water. Stir properly!
  • Add sugar, salt, nutmeg and stir well.
  • Stove should still be on very low, cover properly and allow for 1 hour and 15 minutes.
  • Occasionally, stir in very 20 minutes.

COCONUT CORNMEAL BANANA PORRIDGE

Ingredients:

1 cup of Cornmeal (refined) (soak in 2 cups of water, 20 minutes)
8 oz or 4 green Bananas (blended in 2 cups of water, coconut)
1/4 teaspoon of Nutmeg
Pinch of Sea Salt
1 teaspoon of vanilla (optional)
1 + 1/2 to 2 cups of Sugar - add this near the end.
8 oz of Coconut.
7 cups of Water (total amount used)

I hour 30 minutes on very low simmer
