Instructions:

  1. Peel, wash, and prepare all the vegetable, ackee as well. Visit ackee and saltfish for more. Click
  2. Put to boil prepare ackee fruit only for 8 to 12 minutes, or until tender. (This part is very important)
  3. After that, remove the water, put the boiled ackee aside.
  4. Now, put to heat a frying pot. Put gauge on flame 6. Add oil.
  5. After one minute, add the sliced onion, escallion, and stir in and sauté.
  6. After one minute, and then add the other ingredients, and then the coconut milk with stove on (Hi-Flame).
  7. After 5 to 6 minutes, when the coconut milk sauce thickens and creamy, add the cooked ackee, turn the stove off.
  8. Cover the pot until cool and ready to serve.
    If you are using ackee from the can, this is the time you would remove the water and add it to the pot.
  9. Ackee Rundung is delicious with brown rice or boiled hard cook food, like yam, green bananas, etc.
