Instructions:

  1. Peel, wash, and prepare all the vegetable.
  2. Put to heat a frying pot for stewing.
  3. Put your stove gauge on flame 6.
  4. After one minute, add oil.
  5. After one, minute more.
  6. Add the onion, garlic, Escallion, and herbs, slowly stir in and sauté for 15 seconds.
  7. After that, add the coconut milk, stir in.
  8. Cover well with the pot's lid, and allow simmering for 10 minutes. stove gauge on low.
  9. This time leave pot uncovered, allow simmering for 5 to 8 minutes or until gravey thicken. On flame high!
  10. Add the sliced carrots, two minutes to the end. (carrot can eat raw, so it need not cook long or at all.)
  11. Serve Carrot Rundung accompaniment with brown rice or boiled yam, pumpkin, potatoes, or bananas.

Ingredients:

• 3 cups of Coconut Milk, ( or less)
• 2 Garlic Cloves (crushed)
• ¼ teaspoon of Parsley (dry or fresh) - optional
• ¼ teaspoon of Basil (dry or fresh) - optional
• ½ of an Onion (diced)
• 1 of Escallion (fold whole and remove in the end)
• ½ of Scotch Bonnet Pepper, (or seedless no heat)
• ¼ teaspoon of Pimento Seeds (whole)
• ¼ cup of Coconut Oil (any oil))
