CONCH SOUP

Ingredients:

1/2 to 1 lb. Conch Meat (diced very fine)

2 stacks of Scallion (whole)

Jamaican do not use onion in soups,

2 small Carrots (diced)
1 small Cho Cho (diced)
2 ripen Pepper (scotch bonnet) (whole)
1 ripen Pepper (scotch bonnet) (whole)
1 or 2 tablespoons of Sea Salt
1 tablespoon of Parsley (dried or fresh)
1 tablespoon of Basil (dried or fresh)
1/4 teaspoon of Sage (dried or fresh) - optional
8 Garlic Cloves (smashed)
1 teaspoon of Pimento Berries (diced)
spring of Thyme (tie to two fingers)
Ginger (half of finger) goes well in soup


1/2 to 1 lb of Yellow yam (cut half your palm, or cubes)
1/2 to 1 lb of Pumpkin ( cut half your palm, or cubes; peel the skin off, do not use the pumpkin's skin in the soup)
1 pack of Chicken Soup Noddle (2.1oz)
8 to 9 cups of Waters
(put one cup aside use if need to)

Use 1/2 to 1 lb of Irish Potato (if you do not have yam, cut to cubes)

CONCH SOUP DUMPLINGS

ingredients.

2 cups of Flour
1/2 cup of Water
1 teapoons of Sea salt (any salt is good).
