Vegetable Soup recipe:

Instruction to edit...........

  1. The seasonings, must first be stripped, washed and diced, then put together in a bowl. Do not peel the Yellow Yam.
  2. Put to boil the 8 cups of water. Stove gauge on flame 4..
  3. Add the Yam, in the pot covered slightly.
  4. Allowing boiling for 8 minutes.
  5. Use Irish, or Sweet Pototoes if you have no yam.
  6. If you are using spinner dumplings add it at this time right before the next step.
  7. After that, the diced seasonings, along with the diced bok choy.
  8. Allow cooking for 5 minutes. Stove still gauged on 4 or medium.
  9. This Bok Choy soup is a vegetarian soup and is simple.
  10. Add the spinner dumplings right after that.
  11. Now allow to boil for 8 to 10 minutes. Use a lid to cover the pot slightly. With your stove still gauged on 4.
  12. Total time to cook Bok Choy soup was 25 minutes.

VEGETABLE SOUP

Ingredients:

1/2 to 1 lb of Pumpkin (cut to cubes, peel the skin off, do not use the pumpkin's skin in the soup) (diced to make vegetable stock)

2 stacks of Scallion (whole)

Jamaican do not use onion in soups,

1 to 2 Carrots (diced)
1 small Cho Cho (diced)
6 - 8 Okras (diced)
1/4 to 1/2 lb Spring Beans (diced)
1 ripe pepper (Scotch bonnet) (whole)
1 ripe pepper (Scotch bonnet) (whole)
1 or 2 tablespoons of Sea Salt
1 tablespoon of Parsley (dried or fresh)
1 tablespoon of Basil (dried or fresh) - optional
8 Garlic Cloves (smashed)
4 Whole Cloves (gives soup meat flavor to me) (optional)
1 teaspoon of Pimento Berries (diced)
spring of Thyme (tie to one finger)
Ginger (1/4 of finger) (optional)

USE ALL OR ANY OF THESE VEGETABLES

IF YOU WISH TO DARK GREENS; USE ANY OF THE FOLLOWING

1 cup of Bok Choy (diced) or,
1 cup of Callaloo (diced)
1/2 cup of Broccoli

FOR PROTEIN ADD THE FOLLOWING IF YOU WISH

Peanut, Almond, Use any nut, sprinkle on top serving.

DO NOT USE SOUP DUMPLINGS !!

VEGETABLE SOUP

Ingredients:
