Clean the chicken, blend all marinade ingredients (Scotch bonnet, scallions, garlic, ginger, allspice, thyme, soy sauce, brown sugar), coat the chicken thoroughly, and marinate for at least 2 hours before grilling.
In a food processor, blend the scallions, garlic, ginger, scotch bonnet peppers, allspice berries, thyme, brown sugar, and soy sauce into a thick paste. Pour over chicken and rub well. Marinate in fridge.
