Ingredients

  • • ½ pound of Chicken Breast (boneless) (diced finely)
    • ¼ pound of Potato (boiled and mash to one cup)
    • 2 tablespoons of Butter
    • 1 ripen Scotch Bonnet Pepper or green pepper for mildness
    • or 1 teaspoon of Black Pepper
    • ½ Onion (diced)
    • 1 Garlic Clove (mashed)
    • 1 teaspoon of Fresh Ginger (grated)
    • 1 teaspoon Indian Curry Powder
    • 1 teaspoon of Sea Salt (any salt is good)
    • ½ tablespoon of Parsley (dried)
    • ½ tablespoon of Basil (dried) - optional
    • ¼ cup of Coconut Oil – for frying (any cooking oil is good)vegetable oil)
  • Patty Loaf Ingredients:

  • • 11 oz of Suet (beef fat or shortening)
    • 4 cups of Flour
    • 1 teaspoon Salt
    • 2/3 cup Iced Water

Instruction for cooking the chicken patty filling

  1. First peel wash and prepare the ingredients.
  2. Next, cut the chicken breast into chucks.
  3. Put to heat a pot stewing. Put your stove gauge on 4. and then add the oil.
    Right after that add the chicken chucks. Cook it until tender for 6 - 8 minutes.
  4. After that, once the chicken is cool dice it into fine pieces. Put aside until you are ready for it.
  5. Next peel and dice the potato. Put to boil for 6 to 8 minutes or until tender. Do not overcook it.
  6. Once that is complete, remove the water and mash the potato.
  7. Now put to heat the same pot you cooked the chicken. Add the diced onion, the mashed garlic, the pepper, and the ginger. Stir in while it cooks. Do so for about 30 seconds to 1 minute.
  8. Next, add the curry powder, the salt, Stir in, and then the chicken pieces. Stir in then add the mashed potato. Stir in well.
  9. Add the parsley, stir in and you are finish with (step one). This is the filling for the chicken patty.

    Instruction for the dough (loaf for the patty: (step 2)

  10. Use the trimmings of skin and fatty membrane, which is suet. Alternatively, you can use shortening.
  11. Shred the suet as finely as possible. It cut best if you freeze the suet for one day. Use a sharp knife.
  12. Combine salt and flour, then add the suet, use your fingers to work, while you add the iced water.
  13. This will form dough you can roll out on a flour board.
  14. Flour your rolling pin. Then use it to shape your dough in an circle,
  15. Use your palm beat gently, Knead the dough over twice in order for it to hold together properly.
  16. Next, wrap the dough into wax paper and freeze for one day.
  17. After that, defrost the dough, Cut off small to make one patty.
  18. Now, roll it out on a flour board into a circle the size of a pancake.
  19. Roll thin and cut in a circle. (the size of a CD) (Find a plastic dish or something that size as a template to use and cut out the circle for the patty.)
  20. Next, use a large spoon and fill the center with cooked curried chicken sauce.
  21. Fold the dough over to form a crescent shape.
  22. You can seal the edges with egg white or by clamp the edge using a fork.
  23. Do not prick the patty with a fork.
  24. Lay the patties on an ungreased baking tray.
  25. Preheat your oven at 350 F and bake for about 35 minutes.
