Ingredients

  • • 5 cups of Flour, you might need one more cup (all purpose)
    • 1 tablespoon of Yeast (instant)
    • 1 ¼ cup of Coconut Milk (,or Cow's)
    • 5 oz of Butter (5tablespoons melted)
    • 1/2 cup of Brown sugar
    • 1 teaspoon of Sea Salt (any salt is good)
    • ¼ teaspoon of Nutmeg (grated)
    • ¼ teaspoon of Cloves (ground)
    • ¼ teaspoon of Mixed spice (or allspice)
    • 4 tablespoons of Mixed Peel
    • 1 teaspoon of Rose water (optional)
    • ¼ teaspoon of Almond Essence
    • 1 cup of Raisins
    • 1 tablespoon of Cinnamon Powder
    • 2 Eggs (room temperture and beaten)
    • 1 teaspoon of White Vinegar (this is to preserve the bun for 1 weeks)

    Glaze for the Bun:
    •1 tablespoon of Butter (melted)
    •2 tablespoons of Honey


    JAMAICA'S EASTER SPICE BUN
    (Easter Bun without stout)

    Ingredients:
    (Small Easter Bun baking time 25 minutes)
    • 3 cups of Flour (all purpose)
    • 1 teaspoon of Yeast (instant)
    • 2/3 cup of Coconut Milk (,or Cow's)
    • 2.5 oz of Butter (2.5 tablespoons melted)
    • 1/4 cup of Brown sugar
    • 1/2 teaspoon of Sea Salt (any salt is good)
    • pinch teaspoon of Nutmeg (grated)
    • ¼ teaspoon of Cloves (ground)
    • ¼ teaspoon of Mixed spice (or allspice)
    • 2 tablespoons of Mixed Peel
    • 1/2 teaspoon of Rose water (optional)
    • 1 drop teaspoon of Almond Essence
    • 1/2 cup of Raisins
    • 1 teaspoon of Cinnamon Powder
    • 1 Egg (room temperture and beaten)
    • 1/2 teaspoon of White Vinegar (this is to preserve the bun for 1 weeks)

    Glaze for the Bun:
    •1 tablespoon of Butter (melted)
    •2 tablespoons of Honey

Baking Instructions

  1. Soak the raisins in water 1 to 2 hours before you use them. (Do not use that water). This makes the spice bun taste nice. Some people do not like raisins, therefore you can use less.
  2. First, Sift the flour with all the spices and salt in a large bowl.
  3. Second combine the yeast with to warm coconut milk, and add the sugar. Dilute well. Add 1 teaspoon of Vinegar, then blend for 30 seconds. (This will foam the milk and make the bun soft. As well as distard spoilage for one week.)
  4. Third, add the melted butter, almond essense, molasses, and beaten egg, to the coconut milk texture in a separate bowl. Put aside for 10 minutes.
  5. After that, add the soaked raisins, and mixed peels to the flour mix to form dough.
  6. Be sure all the ingredients are added.
  7. Now place the dough a baking board. Flour it lightly, and then place the dough on it.
  8. Take 6 minutes to knead the dough to get a soft texture. When you do this the excess gas is released.
  9. Next grease a separate bowl, and then add the dough into it. Rotate around until grease is all around the dough. First cover with plastic wrap, but first grease the inside to avoid sticking. Now, cover with a clean damp cloth. Put in a dry and warm place, it will rise twice the size. Allow it to stay for 1 hour to 2 hours.
  10. After that time, knead again for a minute. Form a log, which is the shape of dough. When are you finish. Roll the dough like you would a sleeping bag. Fold the sides inward. Do it slight tight.
  11. Cut two grease papers to a loaf-baking pan. Grease the pan then put them in it. spread more butter on the surface of the grease paper to provide sticking. Then add the dough in the baking pan. Cover well and allow staying for 1 hour. It will rise again.
  12. After that, bake for 25 minutes with a small baking pan, and 50 minutes for the large loaf pan. Preheated your oven 10 minutes before baking at 350F.
  13. When that is finish, combine the melted butter with the honey until dilute. Brush it lightly over the baked bun.
  14. Allow it to cool you are finish.
  15. This spice bun is nice with Jamaican cheese..
