Ingredients

  • 1 cup of Coconut (shredded)
  • 1 cup of Flour (all-purpose)
  • 1 teaspoon of Baking Powder
  • ½ cup Brown Sugar
  • ¼ teaspoon of Sea Salt (any salt is good)
  • ½ teaspoon of Nutmeg (grated)
  • two fingers pinch of Cinnamon powder (optional)
  • ½ teaspoon of Ginger (mashed)

Cooking Instructions

  1. First, de-shell a coconut. Use a grater to shred it.
  2. Second, combine all the ingredients in a bowl.
  3. After that, Knead the dough on a baking board lightly floured.
  4. Use a rolling pin flatten the dough very thin.
  5. Next, use a knife cut 2 inches squares.
  6. Now, grease a baking tray, then put the jackass corn on it.
  7. Remember to preheat your over 8 minutes before you bake.
  8. Set the oven at 375F bake for 12 to 15 minutes.
  9. Allow to cool. You are finish making jackass corn, Jamaica's original.
