Ingredients

  • 1 ¼ cups of Brown Sugar
  • 1 cup of Flour (all purpose flour)
  • ¼ teaspoon of Mixed Spice (optional)
  • ½ teaspoon of Vanilla Extract
  • ¼ teaspoon of Baking Soda
  • ½ teaspoon of Baking Powder
  • ¼ teaspoon of Sea Salt
  • 1 Egg (small) or 1 tablespoon of Water
  • ¼ teaspoon of Nutmeg (grated) - optional
  • 1 ½ cups of Coconut (shredded)
    ½ cup of Peanut (crush any nuts)
    ½ cup of Margarine (room temperature)

Cooking Instructions

  1. Sift together in a bowl, the flour, with the other dry ingredients.
  2. Now in separate bowl, Mix the butter and brown sugar. Stir in add the egg or water and mix again.
  3. Next combine butter mixture with flour mixture, and add the shredded coconut. Then add crushed nuts. (This is optional).
  4. Combine well using a mixer or wooden spoon.
  5. Form cookie dough to a regular cookie shape.
  6. Place the cookies on a baking tray.
  7. In a preheated oven set at 375 bake the cookies for 10 minutes. (More or less)
  8. You can sprinkle more powdered sugar on top. To me, it is delicious plain.
  9. Allow to cool. Coconut Cookie is good dessert snack at any time.
