Ingredients

  • 1 lb Cow Heart & Lite (cut in chucks by 2 by 2 inches)
  • 2 stacks of Scallion (diced) optional
  • 2 medium Onions (diced)
  • 1 medium Carrot (diced)
  • ½ Sweet Peppers (diced)
  • 2 small Tomatoes (diced)
  • 1 large Potato (diced 1½ by 1½ inch)- optional
  • 6 Garlic Cloves
  • 1 green Pepper (Scotch bonnet or real Chili Pepper)
  • 1 ripe Pepper (Scotch bonnet or real Chili Pepper)
  • Ginger – cut to ½ size of your thumb.
  • 4 pieces of Cloves
  • 2 tablespoons of Salt
  • 1 tablespoon of Parsley (dried or fresh)
  • 1 tablespoon of Basil (dried or fresh)
  • ½ tablespoon of Rosemary (diced)
  • 1 teaspoon of Pimento Seeds
  • 1 tablespoon of Browning
  • Thyme (tie fresh pieces together the size of one finger) or 1 teaspoon
  • ½ teaspoon Vinegar (any flavor)
  • ¼ cup Coconut Oil (or Olive oil)
  • 1 Cho-Cho (diced) optional
  • 2 ½ cups of boiled hot Water
  • ¼ cup Ketchup (at the end.)

Cooking Instructions

  1. The seasonings, must first be stripped, washed and diced, then put together in a bowl. (Keep the sweet pepper, ½ of an onion diced, the coconut oil, the ketchup, the white vinegar, and the browning into separate bowls.)
  2. Now put to heat a pressure-cooker pot only for one minute, add oil. With the stove gauged on six, add all the seasoning, then the Cow's heart chunks. Allow to cook for eight minutes. Add the white vinegar then the browning. Stir in the ingredients, now cover for one minute.
  3. Next add 2½ cups of boiled hot water. Stir in! Now this time cover the pressure cooker with the pressure-cooker lid correctly. (Note: Start the timing when it starts to whistle.) Once it starts to whistle gauge the stove on low flame. Allow to pressure for fifteen (20) minutes.
  4. Alternatively boil it for 1 hours in 3 or more cups of water on flame 4. (Look on it every periodially mintues. Please seal the pot good when you are cooking)
  5. After the pressure-cooker is cooled, then remove the cover. (Please allow the pressure-cooker to cool before you open it.) Now add the ½ of an onion diced, sweet pepper, carrot, potato, and cho cho with Stove gauged on six. Cover with a regular pot lid and allow to stew for 8 to 10 minutes. Finally add the ketchup to thicken while it cook for 2 minutes.
  6. If you like add a tablespoon of a good brand steak sauce to this meal, while adding the ketchup. It will be good. Turn the stove off after that.
  7. This is serving for six persons.
