Ingredients

  • 3 small Irish Potatoes
    (blended in 4 cups water)
    - put to boil
    (gauge flame on very low)
  • 1/4 teaspoon of Cinnamon
  • 1/4 teaspoon of Nutmeg
  • 1/2 teaspoon of vanilla (optional)
  • 1/2 cup of Sugar - add this near the end.
  • 2 cups of Water sweetened with Condensed Milk to your liking. - add this 20 minutes near the end.

Cooking Instructions

  1. Dice the Irish potato.
  2. Blend together until smooth..
  3. Put 4 cups of water to boil with the stove gauged on 4.
  4. Once boil to, add the Irish potato liquid.
  5. Now put your stove on low. Allow simmering for 15 minutes.
  6. While the potato porridge is simmering, stir it in until it is creamy. Doing this will not make it lumpy.
  7. Stir in occasionally.
  8. Add the sugar, spices and a pinch of salt.
  9. Use the pot's lid, slightly cover it three quarter way.
  10. After the 15 minutes add the milk (the water sweetened with condensed milk). Alternatively, add 6 cups of water at the beginning, and then add the 3/4 can of the condensed milk now.
  11. Gentle stir in. You want the potato porridge to be creamy.
  12. With the stove still on very low. Allow it to boil for another 10 to 15 minutes.
  13. Jamaican Irish Potato Porridge is ready to drink.
  14. If you are serving hot, drink carefully, do not get burnt.
