  1. Put to soak in the red wine the raisins, mixed peel and the diced prunes for overnight or at least 3 hours.

  3. Use three 8" baking pan. Cut to size two greaseproof paper. Then use butter and lightly base the inside of the baking pans. Lay together the two grease papers on the inside bottom of the baking pans.

  4. Get ready to sift together the all the dry ingredients, such as the flour, baking powder, cimmimon and nutmeg. (note: do this before the egg mixture. the less time the egg sit waiting to be used, the less raw your cake will smell.)

  5. Now, Cream the butter and eggs together until smooth textured.

  6. Be sure to break the eggs two at a time, into a separate container. Before it's added to the bather. (This is to ensure that if a egg is spoil. It would not be add the bather; as well as egg shell can be remove than.)

  7. Now is a good time to preheat your oven at 250 degrees. Do so 8 minutes before you start baking.

  8. Add the egg mixture to the dried ingredients.

  9. Combine well by using a wooden spoon are any cake mixer. Be sure smooth textured

  10. Pour the cake bather half way the baking pans.

  11. Next sprinkle the diced cherry on top before you put it in the oven.

  12. Then lift and drop the baking pan with doubt on a hard surface like a table to release the air bubbles.

  13. For a small baking pan 7 to 8 inches the baking time is 3 hours and 30 minutes. - 3:30 mins
    For a large baking pan 9 to 10 inches the baking time is 4 hours and 30 minutes. - 4:30 mins

  14. Do not open the oven until it’s a least 8 - 5 minutes before completion.
