Breadfruit (fit or almost ripe)
Stove or Cool Stove

Instructions

  1. First remove the stem, mark an X at the bottom of the breadfruit.
  2. Put  the breadfruit on your stove.  Gauge the flame at 8.
  3. Put the breadfruit on the stove, the top down for 8 minutes, then on the 4 sides for 8 minutes each, and Finally 8 on the bottom.
  4. Remove the breadfruit. Next use a damp clean new paper and wrap the breadfruit for at least 5 minutes before you peel.
  5. Now to peel the breadfruit, use a newspaper to hold the top of the fruit to start cutting where the X is.
  6. Remove all the Black skin. Then cut and remove the heart.
  7. It’s now ready to be sliced and serve for 3.
Ackee and Saltfish

Instructions:

  1. Stripe wash and dice all the seasoning, then put together in a bowl., (Keep the sweet pepper, ½ of an onion diced, coconut oil, ketchup, white vinegar and the browning in separate bowls.)
  2. Now put to heat a pressure cooker pot for a minute, add oil.  With the stove gauged at 6, add all the seasoning, then the steak strips. Allow to cook for 8 minutes. Add the white vinegar then the browning. Stir in the ingredients, cover for a minute..
  3.  Next add 2 ½  cups of boiled hot water. Stir in! This time cover the pressure cooker with the pressure cooker pot cover correctly.  (Note: Start the timing when it starts to whistle.) Once it starts to whistle gauge the stove on low flame.  Allow to pressure for 15 minutes.
  4. Remove the cover once it’s cool, add the ½ diced onion and the ketchup. With the stove gauged at 6. Cover with a regular pot cover and allow to stew for 5 minutes. Then turn the stove off.
  5. Add the strips of sweet peppers and cover.

Left over’s should be properly sealed the same day and kept in the refrigerator for no more then 4 days. Or  frozen for up to 6 months.
  With two slices of bread, some lettuce, sliced tomatoes, ketchup and mayonnaise will give you a great tasting sandwich.  This is a good sandwich for lunch time.

Ingredients:
