Ingredients (use to stuff the fish for baking)

  1. First, peel the cassava root and cut it half. Peel the cassava
  2. Use your left hand to hold the grater, and your right hand to grate the cassava. Grate the cassava fine.
  3. Now, squeeze the excess juice from the cassava by putting it between a clean cloth.
  4. After that. add the salt
  5. Measure one cup of the cassava mixture.
  6. Place it on a flat surface. Use your finger to shape the size of a Pancake. It should be ½ inch thick.
  7. Now, use your palm to compress the bammy to a tight hold. (If you are Jamaican, you should know the size of bammies. We are doing smaller size bammies now.)
  8. Put to heat a frying pot, and then put your stove gauge on Hi or 6 frame.
  9. After one minute, add the oil. After one more minute, add the bammy to the hot oil.
  10. Allow to fry for 6 minutes on each side.
  11. After that, add the fried bammy to the coconut milk set a room temperature.
  12. Allow it to soak for 5 minutes.
  13. After that fry the bammies again until it is lightly golden.
