Instructions:


Use a sharp knife to dice the escallion and hot peppers very fine.

Next, add it to ground beef with the salt in a bowl.

Cook meat in a pot for stewing. Put the thyme on top. Put your stove gauge on frame 4.

Add no oil nor water. The meat will make its own oil.

Stir in well while you cook this for 5 minutes.

Put the slices of hardough bread in the pot on top. Pour a small amount of cold water to soak the bread. Then squeeze the water out in a bowl to use again.

Grind the bread slices to crumps.

Add the bread water and the bread crumps to cooking pot. Add the tie thyme. Allow to cook until the bread become dry.

Combine cooking meat and cooked bread.

Add meat-coloring, sweet pepper (paprika) to taste.

After that, cook together for another 15 minutes.

Add the Accent. Turn the stove off you are finish. Do not cover and put aside for the patty filling later.

 

Method for the dough (loaf for the patty:

 

Use the trimmings of skin and fatty membrane, which is suet. Alternatively, you can use shortening.

Shred the suet as finely as possible. It cut best if you freeze the suet for one day. Use a sharp knife.

Combine salt and flour, then add the suet, use your fingers to work, while you add the iced water.

This will form dough you can roll out on a flour board.

Flour your rolling pin. Then use it to shape your dough in an circle,

Use your palm beat gently, Knead the dough over twice in order for it to hold together properly.

Next, wrap the dough into wax paper and freeze for one day.

After that, defrost the dough, Cut off small to make one patty.

Now, roll it out on a flour board into a circle the size of a pancake.

Roll thin and cut in a circle. (the size of a pancake) (Find a plastic dish or something that size as a template to use and cut out the circle for the patty.)

Next, use a large spoon and fill the center with cooked mince meat filling.

Fold the dough over to form a crescent shape.

You can seal the edges with egg white or by clamp the edge using a fork.

Do not prick the patty with a fork.

Lay the patties on an ungreased baking tray.

Preheat your oven at 350 F and bake for about 35 minutes.

You can get 3 dozen regular patties. For cocktail patty use a smaller cutter.
