Instructions:

  1. Peel, wash, and diced all the vegetables put aside.
  2. First, clean and put to soak the red kidney for 15 minutes.
  3. Second, put to heat a pressure cooker, add 4 cups of water, then the red kidney beans.
  4. Put your stove gauge on flame 4. When the pressure-cooker, start to whistle. Allow to cook for 20 minutes.
  5. Once completed, add more water if need to.
  6. Now, add the cubed pumpkin. (It will break down in the ital stew at the end, like butter).
  7. Add the onions, pimento seeds, pepper, garlic, and thyme. Allow to cook for 10 minutes.
  8. After that time, add the diced Irish and sweet potatoes. Allow to cook for 5 minutes more.
  9. Add, the sliced okras and carrots. Allow to simmer for 5 to 8 minutes. Remove the peppers and scallions.
  10. You are finish. The total time is 22 minutes.

Ingredients:

• 1 cup of Kidney Beans (pressure cook for 20 minutes, alternatively you can use the can beans.)
• 2 Scotch Bonnet Peppers (whole)
• 2 cups of Water (if pressured beans use 4 cups) add more if need to.
• ½ lb of Pumpkin (diced cubes)
• 2 cups of Coconut Milk
• 1 teaspoon of Pimento Seeds grains
• 4 Garlic Cloves (mashed)
• 2 stacks of Scallions (Whole)
• 1 small Onion (diced)
• Thyme (tie together two fingers.)
• 2 Irish Potatoes (peel dice to chucks)
• 1 Sweet Potato (dice to chucks)
• 3 Carrots (sliced)
• ½ doz. Okra (sliced)
